I've never been fishing, never really been out on a boat, never ever put my toes in water that I couldn't see the bottom of..but this wknd I did! & I had a great time ...it was an experience I wont forget. After Crab.....It was Rib time...cranking up the grill and eating outside just makes everything taste better don't you think? Well I do and here my friends is a great recipe you must try!<br />

there was nothing too complex about the recipe...it was very simple . I used a rub mix that was already put together .When I started thinking about making ribs I was trying to come up with the perfect mix of spices, but soon realized the "store bought" mixes are really great and instead of buying 15 different spices they were all in one...<br />
<br />
- BBQ Ribs-<br />
1-4-6 oz- container dry rub mix <br />
2 Racks bone in BBQ ribs(not pre-marinated)<br />
1 Bottle of BBQ Sauce of your choice<br />
2 tbs olive oil<br />
Kosher salt & Pepper<br />
<br />
Place ribs on a large cookie sheet lined with aluminum foil<br />
rub generously with olive oil, then kosher salt & Pepper , using entire container of dry rub coat both sides very generously...Place in refrigerator over night. The next day preheat oven to 250 degrees, cover ribs with foil and bake for 3 hrs. When done baking remove and preheat outdoor grill to medium setting . baste with BBQ sauce & cook ribs for 7 minutes turning half way through cooking time..these were a huge hit..Ive had many request since ..I will be making these again soon<br />

1/2 Cup Chopped Almonds<br />
1/2 Cup Brown Sugar<br />
1/2 Cup flour<br />
1/2 Cup Quaker quick cook oats<br />
1 Tbsp Cinnamon<br />
1/2 Tbsp Nutmeg<br />
4 tbsp of butter<br />

Pre-heat oven to 350<br />

Preheat oven to 400<br />

<br /> Thaw puff pastry & Strawberries over night in the refrigerator, the next morning dust with powdered sugar a cool hard surface and unfold dough... ,using a star cookie cutter ..cut out shapes until no dough remains. Place stars on a cookie sheet and back until golden brown. Set strawberries aside until your stars are baked.<br />

Pour your whipping cream in a chilled mixing bowl then add a 1/2 cup of powdered sugar and whip for two minutes or until firm peeks form.<br />

Place a spoon full of strawberries & juice on a plate, next 2-3 puff pastry stars then whipped cream and blueberries..continuing layering another 2-3 puff pasty stars top with raspberries, and more whipped cream then another star....HAPPY FOURTH OF JULY!!!!<br />

Saturday Morning was beautiful here in NE... I woke up and before I could even get down the stairs to get that first cup of coffee... I heard three little voices all at the same time ...say ...what are we doing today? Today was the opening day of our local farmers market in Portsmouth NH ...I absolutely love the fact that it is local farmers and businesses...who bring all of their beautiful goods and set up shop lining the pretty streets of Portsmouth with white tents, beautiful flowers ,cheeses, wines....... <br />

Veggie Muffuletta<br />
1 loaf organic wheat bread- unsliced<br />
1 container olive Tapenade spread<br />
1 package fresh spinach<br />
4 oz mozzarella cheese sliced<br />
2 avocados- sliced<br />
1/2 red onion- sliced<br />
1/2 English cucumber -sliced<br />
2 tomatoes<br />
1 yellow pepper -sliced<br />
1 orange pepper- sliced<br />
1 green pepper- sliced<br />
1 pkg provolone cheese<br />
After slicing all veggies...slice bread loaf in half, then hollow out the top half of your bread loaf. ... YUP family dinner & Sunday gathering at my favorite sister's house where the food is as if you were in the North End In Boston...Oh ya, So good always! I always volunteer too to bring something it gives me such joy to get creative and write a new recipe...So here you go...This Flat Bread is today's creation hope you enjoy!<br />

Balsamic Steak, Wild Mushroom & Gorgonzola Flat Bread<br />
2- .59 lb sirloin steaks<br />
1-8oz pkg (containing 2) flat breads<br />
1-5oz-pkg Baby Arugula<br />
1-lg red onion( sliced)<br />
1-4oz pkg wild mushrooms<br />
1-Cup of Gorgonzola Cheese<br />
3 cloves fresh garlic( sliced)<br />
1/4 Cup balsamic vinegar<br />
1 tbs brown sugar<br />
2 tbs of butter<br />

Pre-heat oven to 400<br />
Slice steak and sear in a hot pan for about 10 minutes, add wild mushrooms and Balsamic vinegar, cover and continue to cook for about 5 minutes then set aside. In another pan add butter ,sliced red onion , garlic then brown sugar. Cook until caramelized about 15 min on medium. <br />

Place flat breads on a cookie sheet top with steak & mushroom mix then caramelized onions.Cook @ 400 for 12 minutes. Remove from oven add 1/2 cup Gorgonzola to each flat bread then a Sprinkle of Arugula, drizzle remaining Balsamic Vinegar from pan that you prepared steak in over flat breads...... and prepare to be happy!!! <br />

I absolutely love, love, love ,this recipe for meatballs...its my very own concoction of meat ,garlic ,cheese, and a few other things .. I usually do a huge pot of these, boil up some pasta and serve with a great marinara sauce but tonight.....considering we had a 5 course meal for Easter I thought I'd whip some up and serve them slider style...easy and simple right? Slice the baguette loaf , next slice the mozzarella & then Tear off basil leafs from the steams, set all three ingredients aside. </div>

Place all remaining ingredients in the bowl of a standing mixer, or a regular bowl for mixing. </div>

Pre-heat oven to 400 , Place shrimp on a cookie sheet prepared with olive oil, sprinkle with kosha salt & fresh cracked pepper. Cook for 10 minutes ,remove and set aside.</div>

1-Cup of Orange Juice<br />
1-6 oz Container plain Yogurt<br />
2 tbs Red Pepper Flakes<br />
1 Pkg Thoma's Corn Bread Muffins<br />
( If you cant find ,you may use corn bread slices bought made) <br />
Pour all ingredients in a bowl ,whisk yogurt and OJ add the chicken.Marinate for 4 hrs when done marinating place either in a grill pan of an outdoor grill and cook for 6-8 min each side next <br />

<strong>fill a 4 quart pot with water cover and bring to a boil, when water comes to a boil add lasagna noodles and cook for three minutes remove promptly then run cool water over the noodles .Place a few paper towels just damp with water on the counter and lay noodles out flat until your ready to use them. Using the same pot add chicken stock, butter and milk bring to a boil. Add 1 cup of shredded parmesan whisk until melted, next add the tbsp of flour to a bowl with enough water to create a paste pour flour mixture into cheese sauce and whisk vigorously until sauce thickens . <strong>Pour 2 tbsp of Olive oil in saute pan ,saute garlic cloves and two tbsp of parsley in a saute pan just until garlic is fragrant, remove chicken sausage casing and add to garlic and olive oil. Pre -heat oven to 350, Cover a baking sheet with Parchment Paper.Allow frozen Puff Pastry to come to room temperature. Flour rolling surface, Roll dough to a 12" square. Place rolled puff pasty on prepared baking sheet. Cut 1/4 off the top of your Brie Cheese making a shallow indentation for the Jam, place cheese on puff pastry fill top of cheese with Jam, fold remaining dough over cheese& Jam, you may trim dough if you have excess... press together to seal. Brush with melted butter & bake for 30 minutes!<br />

<span style="font-family: Courier New;">I had dried some fruit that was on the brink of spoiling & keep it in an air tight container . Drying fruit is really easy, just slice thin then place on a cookie sheet, bake @ 170 for 6 hrs.</span><br />
